I have a bit of a sweet tooth. Okay, maybe that’s an understatement. I really love sweets! I went through a season where I ascribed to the paleo diet and was in need of paleo-friendly desserts to assuage the sweet talkin’ sweet tooth.
I believe in living your best life on Paleo. There is no need to feel like you’re eating cardboard while maintaining a healthy lifestyle. There is also no need to make healthy cooking overly complicated!
I already knew of an easy 3 ingredient peanut butter cookie recipe and decided to make it paleo-friendly! The result: yummy, dense, chocolate chip cookies that incite no guilt!
This recipe makes 12 cookies.
INGREDIENTS:
- 1/2 cup almond butter
- 1/2 cup coconut sugar
- 1 egg
- optional add ins:
- chocolate chips
- 1 tsp vanilla
- 1 tsp cinnamon
METHOD:
- Preheat your oven to 350 degrees.
- Cream the almond butter and coconut sugar together.
- Add the egg and optional add ins (chocolate chips, vanilla, cinnamon).
- (Optional trick: place cookie dough in the freezer for 30 mins or in the refrigerator for a couple hours.)
- Spoon dough onto baking sheet and bake for 10-12 minutes or until edges become slightly browned and crisped.
